Chablis Fourchaumes Premier Cru AOC - Domaine Chanson

 After a long winter, spring was rainy, and the heat arrived in July, bringing with it violent hailstorms, which fortunately did not significantly affect the harvest. Under brilliant sunshine, the harvest took place in late September, resulting in Domaine Chanson's Chablis, boasting great aromatic purity and a beautiful, fresh tension. It was aged for ten months in oak barrels. It is strong, linear, and pleasantly persistent.

 Tasting Notes: Pale golden yellow. It features floral notes and fresh aromas of grapefruit and green almond. It's rich in minerality, and on the palate it shows a well-structured wine with a lovely structure, a spicy finish supported by excellent acidity.

 Pairings: Ideal with fish dishes or cheeses. Perfect with veal with tuna sauce.

 The Cellar: During the reign of Louis XV, around 1750, Simon Verry founded the winery now known as Domaine Chanson Père et Fils, one of the first Burgundy wineries to establish the wine trade, which began in Beaune in the 18th century. More than two centuries later, the Maison currently owns approximately seventy hectares of vineyards, spread across the finest areas classified as "premier crus," including Beaune, Savigny, and Pernand Vergelesses. Since 1999, the Chanson estate has been part of the Bollinger Champagne group, which pursues a policy of achieving the highest quality in each wine, drawing on a large team of experts capable of extracting the most from Burgundy's finest terroirs and the grapes it produces. Among the vines, the utmost respect for the balance of the environment, nature, and ecosystem is maintained, along with the agronomic practices that devote meticulous attention to each plant.
