Rosé Echevele Frizzante Sur Lies Non Filtrato – Cantina Sancio

Rosé Echevele Sparkling Sur Lies Unfiltered – Cantina Sancio

L'Échelevé is a sparkling rosé produced by Cantina Sancio using a vinification process that enhances the grapes' natural freshness and contact with the yeasts. It is made from red grapes grown in vineyards located between Vezzi San Giorgio and Finale Ligure, in an area influenced by the sea and soils that lend minerality and aromatic finesse. Secondary fermentation in the bottle without disgorgement allows the wine to evolve on its lees, developing complexity and a pleasant liveliness.

Type: Sparkling Rosé Wine
Origin: Liguria – Italy
Alcohol Content: 12 – 13%
Format: 75 cl
Allergens: Sulphites
Chalice: Tulip
Serving temperature: 10 – 11°C

Tasting Notes: It has a pale pink color that can become slightly cloudy if the bottle is shaken, a typical characteristic of wines aged on the lees. Fresh and fruity aromas emerge on the nose, with notes of pink grapefruit and delicate nuances of bread crust due to the time spent on the lees. On the palate, it is balanced and dynamic, with good freshness and a pleasant minerality that accompanies the finish.

Pairings: Served chilled, it's ideal as an aperitif. It pairs well with traditional fresh appetizers, seafood dishes, and various pizza and focaccia dishes.

Cultivation: The grapes come from vineyards located in the areas of Vezzi San Giorgio and Finale Ligure with an average density of approximately 4,000 vines per hectare and a production of approximately 80 quintals of grapes.

Harvest: The harvest is done manually in the second half of September with selection of the grapes and rapid delivery to the cellar.

Vinification: White wine vinification with soft pressing and fermentation in steel tanks at a controlled temperature. Fermentation is stopped, leaving approximately 7–8 g/l of residual sugar, followed by secondary fermentation in the bottle without subsequent disgorgement.

Maturation: Approximately four months on the lees in steel tanks.

Aging: One month in the bottle after refermentation.

The Winery: The company's roots lie in the Cappellania estate on the hills above Spotorno, where almost fifty years ago Mario Sancio began cultivating his first vines and producing Pigato. Over the years, the company has grown while maintaining strong ties to the Ligurian Riviera. Today, Sancio Azienda Agricola cultivates approximately 6 hectares of vineyards spread across Spotorno, Vezzi San Giorgio, Orco Feglino, Finale Ligure, and Celle Ligure, with an annual production of approximately 45,000 bottles that express the authentic character of the Ligurian region.

Taste the quality of the big names in oenology and discover hidden pearls of small local realities. Our wine treasures are stored in the dark, preventing them from coming into contact with natural or artificial light. All still wines are placed on their side. Optimal humidity and temperature are maintained through natural processes. Aging and maturation give the wine character and personality: in our cellars it continues to improve undisturbed over time.
