Rosé Echevele Sparkling Sur Lies Unfiltered – Cantina Sancio
L'Échelevé is a sparkling rosé produced by Cantina Sancio using a vinification process that enhances the grapes' natural freshness and contact with the yeasts. It is made from red grapes grown in vineyards located between Vezzi San Giorgio and Finale Ligure, in an area influenced by the sea and soils that lend minerality and aromatic finesse. Secondary fermentation in the bottle without disgorgement allows the wine to evolve on its lees, developing complexity and a pleasant liveliness.

Aging: One month in the bottle after refermentation.
The Winery: The company's roots lie in the Cappellania estate on the hills above Spotorno, where almost fifty years ago Mario Sancio began cultivating his first vines and producing Pigato. Over the years, the company has grown while maintaining strong ties to the Ligurian Riviera. Today, Sancio Azienda Agricola cultivates approximately 6 hectares of vineyards spread across Spotorno, Vezzi San Giorgio, Orco Feglino, Finale Ligure, and Celle Ligure, with an annual production of approximately 45,000 bottles that express the authentic character of the Ligurian region.
