 Relais Bianc Particulier originates from the hills of Cocconato, in the Monferrato area of Asti, where Sauvignon Blanc thrives thanks to the calcareous marl soils and cool climate of the Piedmontese hills. This "Particulier" version represents a special selection of Relais Bianc, characterized by a long aging process that enhances its complexity, elegance, and potential for aging. The result is a refined and profound white wine that accurately expresses the character of the terroir.

 Tasting Notes: It displays a bright straw yellow color. The bouquet is elegant and complex with citrus notes of grapefruit, aromatic hints of Mediterranean herbs such as sage and thyme, and light mineral nuances. On the palate, it is balanced and savory, supported by a fresh acidity that accompanies a long and persistent finish.

 Pairings: Ideal with seafood appetizers, shellfish, herb or vegetable risottos, fish dishes, and white meats. Also excellent with fresh or goat cheeses.

 Vinification: The grapes are softly pressed and cold macerated in an oxygen-free atmosphere. This is followed by slow, low-temperature fermentation in steel tanks.
 Maturation: Approximately 10 months on the fine lees in steel tanks to increase complexity and structure.
 Aging: Long aging in the bottle before being released for sale, allowing the wine to develop greater aromatic depth and ability to evolve.

 The Winery: The Bava family's history begins in Cocconato, a village nestled in the hills of the Monferrato area of Asti. The Bava family has cultivated vineyards in this area since the 1600s, and today the property extends between the Monferrato and Langhe regions, with vineyards managed according to environmentally sustainable principles. The winery was founded in 1911, and over the generations, the family has developed a production style based on a balance between tradition and innovation, aiming to create elegant, age-worthy wines that express the character of the Piedmont terroir.
